Method

Prepare the Courgette:

  • Preheat oven to 190°C (375°F).

  • Slice Courgette lengthwise into thin strips (use a mandolin or knife).

  • Brush with olive oil, sprinkle salt and pepper, and grill or bake for 3–4 minutes until soft and pliable. Set aside.

Make the Filling:

  • In a bowl, mix cream cheese, Parmesan, minced garlic, chopped herbs, salt, and pepper until smooth

Prepare the Sauce:

  • Heat olive oil in a pan, sauté garlic until fragrant.

  • Add tomato passata, oregano, salt, and pepper. Simmer for 10 minutes.

Assemble the Rolls:

  • Spread a spoonful of filling on each Courgette strip and roll tightly.

  • Pour a layer of tomato sauce into a baking dish.

  • Place rolls seam-side down over the sauce.

  • Spoon the remaining sauce on top and sprinkle cheese if using.

Bake:

  • Bake in preheated oven for 20–25 minutes until bubbly and golden on top.

Serve:

  • Garnish with fresh basil and serve warm as a starter or light main.
